1 teaspoon salt
2/3 cup evaporated milk

1 vanilla bean, split and scraped **optional
5 cups all-purpose flour, plus more for pressing cookies
Sugar-Free Chocolate Fudge
12 ounces sugar-free chocolate chips
1/2 teaspoon salt

3/4 cup of evaporated milk
In the electric mixer bowl whisk the butter and Lite&Sweet™ on medium speed until light and fluffy for 2 minutes. Add eggs and salt continue mixing and add the evaporated milk slowly and the vanilla extract and vanilla bean seeds** optional; mix to combine.
Reduce the speed to low and add the flour. Mix until just combined. Divide the dough into two cover tightly with plastic wrap and refrigerate for at least 1 hour.
Preheat the oven to 350 degrees. Form the dough into 1-teaspoon sized round balls. Roll each ball in sanding Lite&Sweet™ and place on baking sheet about 2 inches apart. Lightly dip the bottom of a small glass in flour and gently press down on ball to flatten cookies. Bake for 10-12 minutes. Let cool completely on wire rack.
Place the chocolate, milk, salt and Lite&Sweet™ into a sauce pan heat gently until chocolate is melted. Cool chocolate fudge mixture in refrigerator for 1 hour before spreading on flat side of cookie.
