Sugar Free Pina Colada Smoothie

Summer is coming and all I can think about is being at the beach and drinking Pina Coladas! Although, since summer isn’t here quite yet and my backyard isn’t a beach, I’ll have to make the most of it by creating my own sugar free Pina Coladas. That way, I at least have 50% of the equation to the perfect summer day.

Have you stopped to think of how much sugar is in a Pina Colada, they taste so delicious but are loaded with white refined sugars that is so bad for us. I wanted to go about creating a Pina Colada that did not have the extra added sugars because we already get the sweetness from the coconut and the pineapple fruit, adding a little bit of natural sweetener Lite & Sweet I use in this recipe we can feel better about drinking something healthy with out the need of extra sugar? A regular Pina Colada has 57 grams of sugar which translates to a 1/4 of a cup of no nutritional value. I love combining great ingredients and keeping the original flavor of the drink without using extra sugar. This is what I was able to do to this simple and delicious drink.
One of my favorite things in the world is coconut. Whether it’s coconut ice cream, coconut shrimp, coconut cake, or in this case, a coconut drink! It’s one of those things that can be manipulated into so many different flavors and enhances the taste of a simple piece of food. It’s diverse, while also staying healthy. And when you mix it with pineapple and a natural sweetener Erythritol and Xylitol you really are getting the perfect, healthy drink and eliminating the extra sugars.
Do you ever wonder why one Pina Colada just isn’t enough? Well I’ve found the answer to the mystery. And although I think it’s just because they are tasty and delicious, it’s also because of how easy coconut is to absorb and digest. You never feel heavy after drinking one of these so you go back for another, or in my case 3 more! But even though the coconut is that way, sugar is not. So when you use Lite and Sweet as a sugar substitute you aren’t feeling tired or slow after just one drink. The combination of coconut and Lite and Sweet mixed with some pineapple really does give you the yummiest drink. And you’ll find yourself craving both especially that this drink is with no extra sugar added you can drink this on repeat all summer!

2 1/2 cups fresh pineapple chunks
1/2 cup light coconut milk (or use non fat plain greek yogurt to be extra healthy)
1/2 cup unsweetened flaked coconut
1 tablespoon Lite&Sweet
1 cup ice cubes
Directions:
Place all ingredients in a blender and blend until smooth. Pour into glasses and serve immediately.
