SUGAR FREE NO-BAKE PEANUT BUTTER COOKIES

Who has the time to preheat the oven, set a timer and wait, wait, wait? I’ll be honest when I say there are definitely times where I just don’t have the time. And of course it’s at those times that my kids come in begging for a treat. If you’ve ever had this happen then I have the perfect recipe for you. They are sugar free, no-bake peanut butter cookies! You will never have another type of peanut butter cookie, and you’ll never spend the time cooking cookies in the oven.

Being a baker I always have ingredients on hand because I’m always testing and trying new things. However, I know not everyone has salmon or shallots on hand, but when you only need 6 common ingredients to make this recipe, you can make them at any time! They are the things you have lying around at all times; milk, butter, vanilla, peanut butter, oats, and of course some Lite and Sweet! It’s easy to make, and is healthy.

Presenting healthy cookies to my kids doesn’t always go well, but since I have been doing it for so long they don’t even think twice about it. They also don’t always believe me because even though they are sugar free, they taste as sweet as if there was sugar in them! Now you can eat your favorite cookie, without the amount of time it takes to cook it, and without the sugar to make the calories go soaring.

Ingredients:

3 cups powdered Lite & Sweet

¾ cup Butter, unsalted

¾ cup Milk

½ teaspoon Vanilla Extract

1 ½ cups sugar free Peanut Butter

4 ½ cups Quick Oats

Directions:

  1. In a saucepan over medium heat, combine Lite & Sweet, butter and milk. Bring to a rapid boil for one full minute.
  2. Remove from heat and stir in vanilla and peanut butter.
  3. Mix in the oats, stirring until the mixture begins to cool.
  4. Drop batter by teaspoonful onto waxed paper.
  5. Let it cool until set. Or place them in the refrigerator for 20 minutes. Store in an airtight container for 1 week.
