Sugar Free Flourless Chocolate Cake

Looks can be deceiving. Especially when it comes to chocolate cake. I swear I try really hard to control myself and not eat cakes and sweets. But I can’t help I love and crave sweets like most people. But what if I told you that the chocolate cake you absolutely love and adore but are too afraid to eat now has a healthy option? You probably think I’m being the deceiving one now. But guess what? There actually is a healthy option!

All right, this time around everyone we are not only taking the sugar out of this cake and using xylitol/erythritol Lite and Sweet instead, but we are also talking about removing the flour! I’ve heard many times that we might as well make pudding instead if we’re taking out the flour, but there is a way to keep that fluffy texture without the flour. This recipe is so simple, delicious, and flavorful. You wouldn’t even know there wasn’t flour or sugar in it if it weren’t for me giving it away right now! This recipe for sugar free flourless gluten free chocolate cake will be your and everyone’s new favorite dessert.

So now you will have go got yourself some Lite and Sweet to try this recipe out! I love a good chocolate cake, but it can be so hard to find the perfect healthy recipe. And chocolate doesn’t necessarily scream healthy. But this recipe will keep you wanting more and will also keep the calories down. Now you can eat as much sugar free, flourless chocolate cake, as you want!

1 Cup of Almond Flour

½ Cup of Cocoa

1 t baking powder

1/4 t salt

1/2 C (1 stick) butter, melted

1 C Lite&Sweet

5 eggs at room temperature

Heat oven to 350.  Grease an 8″ or 9″ round or spring form pan. Line the bottom of the pan with parchment paper and then spray with Pam.

Grind the almonds in food processor – pulse until they turn into meal. You can also find it pre-made almond flour that is finely chopped better to use.

Combine the melted butter with the cocoa, set it aside until room temperature. Separate the eggs, putting the yolks in one large bowl and the whites in a large mixing bowl. Add ½ cup of the Lite&Sweet® to the bowl of yolks, and vigorously whisk/mix them together until the yolks are thickened and pale yellow. Carefully fold the cooled, cocoa butter into the yolks. The idea is to keep the light texture of the yolks, so stir gently! Add the almond flour, baking powder, and salt to the chocolate bowl and stir those in well. You will have a tasty chocolate mixture with a slightly grainy texture from the almond flour. Mix the egg whites in a mixed by starting with a medium-high speed. Once the eggs have started to hold soft gradually add the remaining ½ of Lite&Sweet® and continue beating them until the eggs hold firm. (the egg whites will have a lot of volume with a soft, supple texture). Gently fold 1/3 of the beaten egg whites into the bowl of chocolate to help lighten the chocolate mixture so that the rest of the whites blend in easily and keep their airy texture in the finished cake. Once the whites are folded in, add the rest of the whites in two batches, again stirring gently. Pour the batter into pan and bake.  The exact time will vary with the pan.  Start checking at about 35 minutes, until toothpick inserted in center comes out clean. Cut when cool.  If desired, serve with homemade whipped cream and / or chocolate sauce.
