Cucumber Salad

In our house, when it comes to cucumbers the saying is “the more, the better.” This salad is quick to make and at the same time very flavorful and satisfying. With the combination of refreshing cucumber, dill and olives it’s a genius dish.

After the holiday season I feel like I have eaten so much food after attending so many family and friend parties. I always feel the need after the holidays to take a step back and make sure I am cooking lighter meals for the next little bit.

This cucumber salad is just that. it is one my whole family loves and after eating it you don’t feel like you have eaten a thousand calories.  With this recipe it is also a great meal to add in if you are having a BBQ.

In this recipe I used Lite&Sweet which is my favorite natural sweetener to use! It is made up of xylitol and erythritol and is low calories. It is so much better for your body then a normal sugar.

3 cucumbers
½ cup red onion
Kalamata olives sliced
½ cup lemon juice
2 tbsp chopped fresh dill
1 tbsp canola oil
2 tsp Lite&Sweet
1 tsp salt


Combine 3 thinly sliced cucumbers; ½ cup each thinly sliced red onions, and olives in a large bowl.
Add ¼ cup lemon juice, 2 tbso chopped dill, 1 tbsp canola oil, 2 tsp Lite&Sweet, and 1 tsp salt to the bowl. Mix well.
Cover and refrigerate for at least 2 hours and serve to enjoy.
