Pumpking is my all time favorite symbol of everything around halloween and thanksgiving. I will be making and sharing many pumpkin dishes that include the favorite pumpkin spice flavor as well as the other ingredients like cinnamon, ginger, mace, clove, and allspice. Clove is my all time preferred fall flavor, you have to use a small amount sparingly but it brings out and marries the other flavors so well.

These pumpkin pecan muffins has been my favorite to make and eat. It’s not hard to put together the batter and lay in a bed of pecans to be baked. After baking you simply flip it over to the pecans and quickly make the glaze by using powdered Lite and Sweet. I love this recipe so much because not only is easy to make, bake and glaze, It also is healthy using pumpkin as the base and no sugar. I use Lite and Sweet a sugar substitute that works the best for cooking and baking.
