No Sugar Added Zucchini Cupcakes

ingredients

3 large eggs

1 1/3 cups Lite and Sweet

1/2 cup canola oil

1/2 cup orange juice

1 tsp. almond extract

2 1/2 cups all-purpose flour

2 tsp ground cinnamon

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 tsp ground cloves

1 1/2 cups shredded zucchini

Frosting

2 1/2 cups powder Lite and Sweet

1/2 cup butter, cubed

1/4 cup heavy cream (or cream substitute)

1 tsp vailla extract

Directions:

Preheat oven 350 degrees. Beat first five ingredients. Combine dry ingredients; gradually add to egg mixture and blend well. Stir in zucchini. Fill paper-lined muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool cupcakes 10 minutes before removing to a wire rack. For frosting, using a blender or food processor pulse for about 1-2 minutes until Lite and Sweet is powder. Next, using a mixing bowl combine the lite and sweet, butter and heavy cream and whip on high until the mixture is creamy and you can see peaks. Adjust with a bite more cream adding (1 tbsp at the time). Next add to a plastic bag, cut a small hole on one side of the bag. Squeeze the whipping cream to the side that’s open, holding the bag with both hands squeeze a small amount on top of the cooled cupcakes.
