No Sugar Added Yogurt Corn Bread

When I think of Cornbread I think of comfort food, now with the chilly fall weather fully upon us this is a great football game day spread with beans, greens, or a bowl of chili. We all love the yellow, flaky, sweet bread that melts in our mouths, that is the perfect added side to our dishes. The tender texture comes from the yogurt that makes it a healthier baking, it adds the moisture as extra butter would or oil with fewer calories. It also gives your cornbread a protein boast! How else to make it healthier but making it sugar free with the Lite and Sweet, its perfect because it taste like sugar and has fewer calories. The average American consumes anywhere from 19-32 teaspoons of sugar per day! That is almost 66 pounds a year! It tricks your body into gaining weight and affects you insulin and leptin signaling. This year let’s do something different for our bodies and give it a treat worth having! Unlike traditional recipes with oil or butter I am using coconut oil as well.

We all love the golden sweet cornbread to have with our meals and to add flavor with our favorite toppings such as maple syrup, butter or honey, you might also add some heat to them with jalapeno pepper, red crushed bell pepper flakes or for texture adding one cup frozen corn kernels. Cornbread is meant to be mild and plain I know there are people out who would say otherwise. What is great about cornbread is you can get as creative with it as you want.  I love this easy recipe, which you probably have all the ingredients for already in your pantry! No Sugar Added Yogurt Corn Bread


1 cup yellow cornmeal

¼ cup all-purpose flour

2 tsp baking powder

½ tsp baking soda

1 egg, lightly beaten

1 (8 ounces) Plain Greek Yogurt

½ cup milk or milk substitute

¼ cup melted coconut oil

2 tbsp. Lite & Sweet


Heat oven to 425 degrees. In a large bowl, combine the cornmeal, flour, baking powder, salt and baking soda, set aside. In another bowl, beat the egg with a fork, next combine the yogurt, milk or milk substitute, melted coconut oil and Lite and Sweet. Stir into the dry ingredients just until moistened. Pour into an 8-in. square baking dish coated with cooking spray.

Bake for 16-20 minutes or until a toothpick comes out clean.
