No Sugar Added Watermelon Salad Appetizer with Balsamic Glaze

Okay, remember that super delicious glaze I told you about? And remember how I said to be brave and try it with some unusual ingredients you wouldn’t normally use? Well here is that thing! If you weren’t sure exactly what to pair it with then you can thank me for giving you the perfect pairing idea ! It is a watermelon salad appetizer. Yes, watermelon, cucumbers, feta, olive oil, and my favorite, the sugar free balsamic glaze.

Fresh is what I think of when I’m asked to make something for a summer picnic. It’s hot out, games are usually involved, and you want something that will be refreshing to your mouth and lighten up the hotness that comes with an outdoor picnic. This salad is just exactly that! When you get all of the ingredients combined and take a bite you will be shocked at how well they all work together, but that it really is so refreshing and kind of airy, thanks to the watermelon. It’s quick to make, you can grab it on the go, and all ages will appreciate it!

Trust me when I say all ages because this salad can get fun. When I’m putting it together I let my girls pull out the cookie cutter shape they want to cut the watermelon into. They think it is a blast and get to tell whoever they were sharing it with that they got to be the creators of it. I love involving my family in my recipe creations and what better way to get your family ready for all the fun summer parties than cooking delicious, healthy meals together! Not only the kids have fun helping me they are also getting exposed to different fruits, vegetables and flavors. It’s very important to help children learn how to eat healthy and lots of fruits and vegetables, so the best way I found is to involve them in the cooking process.

Yield: 6 servings


1 whole baby Watermelon

⅔ cup of Cucumber, diced

⅔ cup Feta Cheese crumbles, divided

½ tablespoon Red Wine Vinegar

Fresh Basil

1 teaspoons Olive Oil

Salt and Pepper

Sugar Free Balsamic Glaze (recipe here)


  1. Cut the watermelon into 2 inch slices. Using a 2 inch cookie cutter, cut the watermelon into whatever shape you want. Use a melon baller to scoop out a little dip in the center of the watermelon bites.
  2. Dice the remaining watermelon into small squares until you have about ⅔ of a cup.
  3. Toss the diced watermelon, cucumber and the ⅓ cup of the feta cheese crumbles with the red wine vinegar and oil. Season to taste with salt and pepper.
  4. Fill each of the watermelon cups with the salad mixture. Sprinkle with remaining feta cheese and a little bit of chopped Basil.
  5. Drizzle with the Sugar Free Balsamic Glaze.
  6. Serve immediately to your guests and enjoy!
