There’s something about homemade ice cream that makes summer that much better. It could be the small amount of time and energy it takes to make it, watching how excited my girls get watching it churn, or getting to choose what kind of ingredients go into it. But no matter which thing it is, it will always taste amazing!

This recipe is a no sugar added vanilla ice cream that tastes fresh, cold and sweet even without the sugar! On those summer nights when all you want to do is be with your family, hanging out in the backyard it’s nice to be able to pull something right out of the freezer rather than having to leave the house or go somewhere that is going to serve you sugary, fatty ice cream. It’s the perfect summer dessert.

You can feel good about eating ice cream with out the sugar calorie, an ice cream that is sweet like a regular sugar ice cream but made with Lite and Sweet. Lite and Sweet is so easy to use and you can replace sugar same amount for Lite and Sweet. It tastes like sugar with no residual taste making it perfect for any recipe. It’s a natural non gmo sweetener used by people that cannot have sugar but becoming more and more popular for its health benefits of not altering blood sugar levels and helping satisfy our sweet tooth. It’s safe for diabetics with the glycemic index of low 7 and ideal for anyone looking to replace sugar from their diets.

If you’re not convinced by the convenience or the fact that it doesn’t have sugar, then you must know that it only takes 5 ingredients! Not only is it easy and quick to make, but the ingredients are things you will most likely have around the house. So when I say it takes no effort to make this, I mean it. Plus, it’s an activity your whole family can do together. My girls absolutely love pouring the ingredients into the ice cream machine and listen to it churn. They turn into mini chefs and don’t just make the food, but they also serve us. They get their favorite toppings, and make these creations that blow my mind! It’s the perfect activity that involves yummy, healthy food, and perfect family time!

No Sugar Added Vanilla Ice Cream

2 cups powder Lite and Sweet

4 1/2 cups fat free Half and Half

1/2 tsp salt 

3 eggs (lightly beaten)

2 tablespoons vanilla

2 cups heavy whipping cream 


In a big sauce pan over low heat combine powder Lite and Sweet, Half and Half, salt, and lightly beaten eggs.  Stir regularly until mixture is all combined and becomes a thin custard for about 15-20 minutes.   Set the custard aside until it cools to room temperature. Stir in the vanilla and heavy whipping cream. Transfer custard to a bowl or a metal pan, refrigerate for at least an two hours or overnight. The ice cream will have a soft, creamy texture. If desired, transfer cooled custard in an ice cream maker and follow the manufacturer’s instructions.

If not in an ice cream machine, leave it in the freezer until it is firm. Remove from freezer for about 5 minutes before serving.
