No Sugar Added Strawberry Caprese Salad

I am convinced that anyone that doesn’t like tomatoes still somehow falls in love with caprese salad. Seriously, you could not be a tomato fan at all and still eat a mouthful and enjoy a good caprese salad! I swear by it. Although, I know some of you stubborn eaters that don’t like tomatoes still won’t give it a try (even though I’m sure you’d love it), so I decided to switch things up a little and make a strawberry caprese salad!This recipe is perfect for this time of year where strawberries are in season and especially to surprise your guests with a summer caprese salad without tomatoes.

Do you realize how many more recipes you could have just by switching out one ingredient? It took me a while to figure it out, but now that I have my horizons have been broadened and I know make more recipes than I ever thought I would. And that’s exactly what I did with the caprese salad. I substituted the tomatoes for strawberries and voila, you have yourself an entirely new tasting salad that looks incredible and was basically effortless on your end! It’s healthy, delicious, and something that even the tomato haters will eat! This salad looks beautiful and the strawberries provide you with fiber,  and vitamins and mixing with fresh mozzarella which may I add is the best cheese for us to eat. Mozzarella is a great cheese because not only is full of great benefits for our skin, vision and red cell formation it is water soluble so the body doesn’t store as fat but it satisfy our nutritional needs.

This salad was fun to make because I got to use not one, but two of my other recipes and combine them all to create this one perfect dish! I have made classic caprese salad before and you can find the recipe but this salad can be a fun sweet salad or a dessert. We all know that you can’t just have strawberries and mozzarella and call it a salad, it needs something that binds it all together. So I use my sugar free balsamic glaze that is so good and that yummy kale pesto I recently shared. They are all very rich flavorful on their own but mouth watering goodness when combined together and make the most perfect salad that everyone, and yes I mean everyone this time, will love! This recipe is created to satisfy your summer berry craving and provide you with a healthy option so you can avoid unwanted sugars from your daily use. All my recipes are made with for the sugar conscious person that knows we are over consuming sugar and want to make their own healthy sugar free dishes that tastes good and have less calories.

I use a natural sweetener xylitol and erythritol sweetener on my cooking and hope to inspire joy for others looking to avoid sugar. This recipe has no sugar added even though its a strawberry salad the sauces and glaze were made sugar free for the benefit of anyone looking to avoid using sugar at home and when making meals for their families. Yield: 2 Servings

Ingredients

1 cup Strawberries, sliced

3 ounces fresh Mozzarella Bocconcini, cut into slices

¼ cup of my Herbed Kale Pesto (recipe here)

Sugar Free Balsamic Glaze to drizzle (recipe here)

Sea Salt

Directions:

  1. Put strawberries and mozzarella in a bowl, sprinkle with Sea Salt to taste.
  2. Add the Herbed Kale Pesto and gently stir to coat, using hands if needed.
  3. Portion onto plates and drizzle with the Sugar Free Balsamic Glaze to serve.
