No Sugar Added Pineapple Parfait
Starting the day eating right, getting some exercise is the recipe to kick start our metabolism and burn calories thought out the day. Good healthy foods gives us the energy to get things done and helps us focus in the duties of the day. I eat breakfast daily and in many ways I can tell you I feel better in my concentration, I feel less cravings through out the day and I know it can help in so many other ways. I know when I wake up I break my fast by eating a healthy breakfast because my body needs to use the vitamins and nutrients from healthy foods like dairy, grans, and fruits to give me a zap of energy. I first made this No Sugar Added Pineapple Parfait last summer to try a new breakfast or yogurt snack idea. It turned out so delicious and good that I decided to submit for the Healthy Living Magazine which was well accepted and published Fall 2016. I never shared on the blog before but I made it again last week and I had to share with you guys.
If there is one thing you can remember from here is to please eat healthy sugar free balanced meals. It’s so important to not skip morning breakfast and even though this recipe can be made ahead of time and enjoyed on the go or as a snack and even a healthy dessert eat a variety of good satisfying delicious meals. When I think about breakfast time it’s the most hectic hours of my day, so I make sure I eat plan something the night before so I prepared for the day with a good meal for myself. I also aim to eat some healthy dairy meaning yogurts . You can choose so many different yogurts ow day don’t have to be milk based, there are milk substitute yogurts that are great. I personally prefer greek yogurt for the excellent source of potassium, protein, zinc B6 and B12 vitamins. The difference between Greek yogurt and regular yogurt is that greek yogurt is thicker, creamier and contains probiotic cultures that very beneficial for our gut and overall health.
This recipe not only looks so good like a day at a fancy white sand beach resort, it is absolutely tasty with hints of tropical flare. Providing me with valuable proteins and healthy vitamins for a slimming no sugar added breakfast. Naturally sweeten the yogurt with Lite & Sweet xylitol and erythritol sweetener, it’s sweet without the calories of sugar making this parfait healthier and light. Next add some coconut milk to bring the tropical flavor to the parfait. After add the pineapple with lime rind and top with macadamia nuts. Repeat the process for 2 layer of parfait, fruit and nuts. Absolutely a recipe to make it for anytime enjoyment.
Sugar Free Pineapple Parfait Recipe
1/4 Fresh pineapple, peeled, cored and sliced
3 Tbsp Lite&Sweet
1 Tbsp water
1 Tsp lime rind
2 Tsp fresh lime juice
3 Tbsp light coconut milk
3 Tbsp plain Greek yogurt
2 Tbsp chopped macadamia nuts
Heat a grill pan over medium-high heat. Coat pan with cooking spray. Arrange pineapple on grill; cook for about 5-6 minutes on each side or until well marked. Remove from pan or grill; cool. In a small saucepan add the water and Lite&Sweet cook over medium heat for 2-3 minutes until sweetener is dissolved. Set aside and let it cool. Combine coconut milk and yogurt in bowl, stirring vigorously with a whisk and add the cool Lite&Sweet syrup and lime rind and mix all together. Place half of pineapple in the bottom of a small mason jar or juice glass. Top with 1 tbsp nuts, half of coconut milk mixture and remaining nuts. Garnish with additional pineapple and lime rind if desired.
