No Sugar Added Grilled Pineapple
I recently went to Brazil to visit my family and friends and while I was there we went to a BBQ that my mother’s friend was having. She was so happy to see me again because it had been many years since we last saw one another. The BBQ was very fun with lots of amazing tasty meats and veggies, but my favorite part was the grilled pineapple. As the pineapple heats up on the hot grill the sugars caramelize and the juices gets trapped inside. It’s soft and crunchy while at the same time being one of the most satisfying flavors you can have for a side dish or dessert.
The only problem is that at the BBQ the grilled pineapple was made with brown sugar, which in fact made me eat only a little piece to try. I try really hard to avoid sugar as much as I can and that’s why I wanted to recreate that sweet, warm, juicy grilled pineapple with a sweet alternative and not use sugar. I made this recipe using a very little portion of Lite and Sweet sweetener which is a brand of natural sweetener xylitol and erythritol. It’s my favorite sweetener because I can use it like sugar and it doesn’t give me an aftertaste and is as sweet as sugar. After all, pineapple is already naturally sweet so the only reason I add the sweetener is to form a caramelized layer to trap the natural flavor and sweetness inside.
I recommend using fresh pineapple because the texture is firmer and tastes better than canned pineapple rings. This is a healthy and easy recipe that can be made in less than 20 minutes. I love making grilled pineapple when I’m grilling because I can grill my meat and make my dessert at the same time. The recipe is very simple using only a few ingredients.
Pineapple is a unique fruit because not only is great tasting it’s also very good for digestion. When you suffer from poor digestion pineapple helps breaks down the food with the protein digesting enzyme called bromelain. The bromelain enzyme helps the food break down easier which aids in faster digestions. The next benefit for eating this fruit is that pineapple is high in fiber making it extra healthy for our diets and a far healthier choice than the vast majority of sweet foods you might have as a dessert.
I also like that pineapple has a high source of vitamin C, did you know that 1 cup of pineapple contains more than 100% of the daily intake of Vitamin C. This rich fruit makes an easy and great tasting source of nutrient for a dessert. No Sugar Added Grilled Pineapple
1/2 peeled, pineapple
1 tablespoon melted butter
1/2 cup Lite and Sweet
1 teaspoons ground cinnamon
Preheat the grill or grill pan on high.
Prepare the pineapple by cutting off both ends. Stand the pineapple on it’s base and slice off the sides. Next cut 1” round slices to grill.
Brush the melted butter on the pineapple round slices coating both sides. Set aside.
In a plate combine the Lite and Sweet and ground cinnamon mix well. Next add the pineapple slices to the mixture one at a time and coat well evenly on each side.
Lower the heat to medium-low, evenly space the pineapple across the grill and cook for 3-5 minutes per side, turning them quarter clock wise to another 3-5 minutes to make a caramelized pineapple and make brown grill marks. Repeat this on both sides of the pineapple. Check after 3 minutes to make sure is caramelizing. Watch it closely so it won’t burn. Enjoy as a dessert or as a side.
