No Sugar Added Coconut-Pineapple Soft Served
If you like Pina Coladas, then try this soft serve dessert! Catchy, right? Well do you want to know what’s even easier to catch on to? This sugar free, coconut pineapple dessert! If you like Pina Coladas, you will love this dessert. And if you don’t you obviously need to try one because I know there’s no way you can try a Pina Colada and not like it. I might sound like I’m pressuring you, but it’s the same way I feel about this refreshing treat. It’s a Pina Colada without the sugar and crazy amount of calories.
Fresh and dessert don’t typically go together in same sentence, but with this recipe they do! We are using fresh pineapple chunks, coconut flakes, coconut milk and Lite and Sweet. What is more natural and fresh than those ingredients? Pretty much nothing. And you want to know the best part? This recipe is only are 5 ingredients, including the ice. So now talk about fresh, natural, sugar free, lactose free, gluten free, healthy and easy! Do I still need to do more convincing? If so, you must know it takes minimal effort to put together. It takes less than 10 minutes to make! Oh, and did I mention it’s absolutely delicious?
I could go on and on about this dessert. But what I want to make sure you know is that it’s healthy, sugar free and light. After a big dinner meal I find myself not always, keyword not, wanting a super rich chocolate dessert. So we mix it up a little and create desserts like this that still have the sweetness to them, but incorporate fruits rather than only using deep, rich ingredients. I love desserts and I love adding a new type of dessert to my pallet. And trust me Pina Coladas soft serve in a bowl is just as delicious!
Yield: 4 servings
7 cups fresh Pineapple, frozen
½ cup canned Coconut Milk and more as needed
3 teaspoon powdered Lite & Sweet
Ice cubes, as needed
Coconut Flakes, toasted for garnish
- Place the frozen fresh pineapple in a food processor together with ½ cup of the coconut milk. Process until the mixture is smooth and creamy. Scrape down the sides and add more milk as needed to achieve a smooth consistency.
- Add the powdered Lite & Sweet. Process once more to incorporate the sweetener. If the mixture is too runny add a handful of ice cubes (at a time) until you reach your desired consistency.
- To achieve a soft serve-like look, fit a piping bag or ziploc with a large open star tip. Fill the smoothie into the bag and pipe into serving bowls or spoon smoothie into the bowls as you prefer, garnish with the toasted Coconut Flakes and a slice of fresh Pineapple.
- Serve immediately and enjoy as a healthy dessert!
