No Sugar Added Celery Apple Salad

With summer ending and fall arriving quickly, keeping refreshing and hydrating recipes on hand is key for maintaining a healthy balance and bringing the best dish to the party. With changing leaves, come tasty apples for mixing up our old recipes, making them both seasonal and sweet. Apples bring lots to the table, aside from their delicious, sweet flavor they are also full of antioxidant that fight disease! Using them here gave this salad a sweet flavor without adding any sugar.

While celery may be 95% water, it is also packed full of important vitamins and minerals! Celery is loaded with vitamins K, A and C, has folate, potassium and fiber! These nutrients are great for hydration and digestion and help your body in many other ways. If you thought ants-on-a-log was the only way to use this vegetable, think again! There are so many ways to eat celery and the best way I found for eating more of this great vegetable, is to make it into a salad. Celery is a vegetable that is closely related and commonly paired with parsley, onions and carrots. Celery has a reputation of being bland and is often used as a supporting ingredient; these crisp green stalks are more than worthy of being the star for your next light side dish. In this recipe I paired celery with apples for a refreshing and crisp taste, with a sweet bite, no guilt.

The mixture of ginger and roasted pistachios to top this recipe off gives it a unique flare that is perfect for either a mid-day snack or to add to your next entree.

Not only is this salad delicious, but it is simple to make and calls for only nine ingredients. No Sugar Added Celery Apple Salad

Makes: 7 cups

Peperation time: 5 minutes


1 lb Celery

1/4 cup Apple Cider Vinegar

1/4 cup Extra Virgin Olive Oil

1/2 tsp. Ground Ginger

1/2 tsp. salt

1 Thinly Sliced Honey Crisp or Jazz Apple

1/2 cup. Shelled Roasted and Salted Pistachios

1 Tbsp Fresh grated ginger

2 tsp. powder Lite and Sweet


Wash, Trim and cut the 1 lb celery into thinly sliced pieces that are 2-3 inches long, add to a large bowl. Next slice your honey crisp (or jazz) apple into thin slices and combine it with the celery. In a small cup, grate the ginger and add the Lite and Sweet (make sure they are mixed well) before you add it to the celery and apple mixture. Next add the apple cider vinegar, extra virgin olive oil, ground ginger, salt. De-shell the roasted and salted pistachios before adding them to the salad (you can chop them if you’d like). To finish, toss to combine everything, mixing it well, and serve!
