No Sugar Added Carrot Smoothie

My favorite month of the year is here! Okay, sometimes it’s March and other times it’s April but that’s because it depends on when Easter is! Don’t get me wrong, I love baking during the Holidays and getting creative around that time, but when it’s Easter time I get to use two of my all time favorite ingredients to make endless amounts of recipes. Can you guess what those two ingredients might be? Eggs and carrots! You can find those two things just about anywhere any time of year, however, right around this time there is much more creativity, different shapes and colors, and so many recipes we can make with them.

This recipe is a sugar free, lactose free, carrot smoothie and it is delicious. The name of this recipe might scare some people off because when you think of carrots and smoothies you don’t always think of them together. But, when I tell you that you’ll be adding mangos, pineapples and bananas, you’re in. And the real ingredient that sells everyone is the Lite and Sweet! I don’t use a ton, but adding a little kick of “healthy sugar” really brings the whole drink together. Plus this is a natural sweetener that comes from vegetables and tastes great with no bitterness or aftertaste.

This recipe is perfect for Easter time, plus spring/summer time. Smoothies always remind me of the warm months and we are getting close to it being warm every day. It’s one of my favorites and I know you’ll all enjoy it too. So try this recipe out and maybe make a little extra to leave for the Easter Bunny! 

INGREDIENTS

  • 3 Carrots, whole including leaves
  • 2 cups Water
  • 1 cup Mango, fresh or frozen
  • 1 cup Pineapple
  • 1 Banana, peeled
  • 1 tablespoon Lite & Sweet

INSTRUCTIONS

  1. Blend carrot tops and water first until smooth.
  2. Add remaining ingredients and blend again.
