Everyone will love these 3 delicious, healthy and cold refreshing summer salads. They are made with fresh, high water content fruit and veggies that when enjoyed cold it’s the perfect summer side dish.

Sugar Free Cucumber Salad

This watermelon spinach salad is very good because you will feel refreshed and revitalized when eating every bite. It’s a very colorful and healthy salad combining simple ingredients to cool and satisfy any palate. This salad combines watermelon and cantaloupe as well lots of spinach making it very nourishing and full packed with vitamins, minerals and fibers. The melons are a rich source of vitamins A, B6, and C. Spinach is packed with dietary fiber, vitamins, and minerals. It is also considered as one of the healthiest foods.
Eating salads is one of the healthiest habits you can have and it’s so fun to make as well. If you have kids, it is best to introduce this habit and let them get the hang of it. I may suggest you use the watermelon shell as the salad bowl. Get creative with this salad and carve out the shell into a bowl, serve to your family and friends this salad in the melon bowl and they will love it.  Just carve the melon and cut off top 1/4 of melon. Being careful not to cut through to watermelon, cut thin slices from bottom of melon so it sit flat. Scoop out watermelon, leaving 1/2 – 1 -inch – thick shell. Wrap melon bowl in plastic wrap to keep moist; refrigerate until ready to fill. At serving time, fill it with the Watermelon and Spinach Salad and enjoy.

My husband and I eat salad daily for lunch and a side for dinner. We love to feast in healthy salads for several reasons health, weight and extra fiber for our diet. First it was mostly for weight since my husband and I been married and we been following a low carb, sugar free, extra fruits and vegetables diets, my husband has lost 80 lbs in 4 years and has maintained off just eating healthy and walking daily.
This sugar free citrus salad is popular in the winter but I like to eat it cold on hot summer days because of the combination of orange and pomegranate is so good for our health and you can eat all year round. It’s a healthy combination where orange provides a healthy dose of vitamin C and fibers and pomegranate boost immunity health, aids in good cholesterol and blood pressure.
You will enjoy making and eating this salad it’s so fun and colorful not to forget the wonderful health benefits you are getting. I make extra and keep in the refrigerator so I can eat as a snack or treat through out the day. During the summer months it is difficult sometimes to find fresh pomegranate but you can get it frozen and use in the salad they are super easy to thaw and great to enjoy year round.

Sugar Free Citrus-Pomegranate Salad

When you crave a light cold salad or a side dish that won’t weigh down the rest of your dinner but still has enough punch to stand out on its own, make this salad. Quick-pickling the cucumbers with fresh lemon juice and a little sweetness from Lite and Sweet gives them the vibrancy they’re all too often missing. And since it needs a little time for the flavors to marry, this salad is a great pick for a potluck or picnic.
