I may suggest you use the watermelon shell as the salad bowl. Get creative with this salad and carve out the shell into a bowl, serve to your family and friends this salad in the melon bowl and they will love it. Just carve the melon and cut off top 1/4 of melon. Being careful not to cut through to watermelon, cut thin slices from bottom of melon so it sit flat. Scoop out watermelon, leaving 1/2 – 1 -inch – thick shell. Wrap melon bowl in plastic wrap to keep moist; refrigerate until ready to fill. At serving time, fill it with the Watermelon and Spinach Salad and enjoy.

When you crave a light cold salad or a side dish that won’t weigh down the rest of your dinner but still has enough punch to stand out on its own, make this salad.
Quick-pickling the cucumbers with fresh lemon juice and a little sweetness from Lite and Sweet
gives them the vibrancy they’re all too often missing. Tossed with a little oil, salt, pepper, and lots of chopped fresh dill, red onions and kalamata olives adding to the cucumber slices transform into a simple yet delicious salad that’s the perfect counterpart for grilled meat or fish.
To me, this salad screams summer and paring with grilling makes it a wonderful meal. It’s a light, refreshing addition to whatever you happen to toss on the grill in the evening, be it steak, chicken, fish, or even just veggies. Toss it together when you get home, and let it sit and marinate while you prepare the grilled goods. And since it needs a little time for the flavors to marry, this salad is a great pick for a potluck or picnic.
