No Sugar Added Banana Nut Muffins


1 cup Lite&Sweet

1/2 cup softened butter

2 eggs

3 to 4 medium bananas (about 1 1/2 cup)

1/2 cup buttermilk

1 teaspoon vanilla

2 cups of all purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup chopped nuts (if desired)


Heat oven to 350F. Prepare muffin pan with paper liners.

In a large bowl, cream together with an electric mixer the Lite&Sweet and butter. Add eggs, mashed bananas, buttermilk and vanilla; mix well on medium speed until smooth. Stir in flour, baking soda, baking powder, salt and nuts until moistened. (Do not over-mix! Over-mixing will result in dense, tough muffins.) Fill muffin cups using a measuring cup lightly spoon the mixture into muffin tin.

Bake for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Check if is done by pressing down on the top of the muffin. If it bounces back, it’s done. Cool for 10 minutes. Loosen sides of muffin pan; removed from pan to cooling rack.
