Natural & Sugar Free Peanut Butter

Peanut butter, the universal food that brings everyone joy and happiness. And what makes you happier than peanut butter? How about natural, sugar free peanut butter?
Peanut butter is one of the easiest things to make, so why would you want store bought peanut butter that contains preservative and ingredients that you can’t even pronounce? You don’t want to put that in your body, or your children’s.
While a lot of people make homemade peanut butter by simply blending up peanuts in a food processor or blender, I like to make mine a little sweeter and a little creamier, with added health benefits. It seems like we can’t escape hearing about the health benefits of coconut oil these days. Everything from good cholesterol to heart health to improved memory and brain function, it also helps make this sugar free peanut butter extra creamy. And adding Lite&Sweet to this recipe helps sweeten the peanut butter while still remaining sugar free, and with the added benefits of xylitol. Xylitol is known to help improve oral health as well as increase the absorption of calcium in the digestive system.
This sugar free peanut butter takes only a few short minutes to blend together and is the perfect dip or spread. If your kids need an after school snack or a quick healthy dessert, reach for this sugar free peanut butter and some apple slices. Send them off to school in the morning with some toast and peanut butter, or a sugar free peanut butter and jelly sandwich for lunch. You can find my recipe for sugar free preserves here.

Sugar Free Peanut Butter Ingredients:
- 4 cups Roasted, Unsalted Peanuts
- 1/4 cup Lite&Sweet
- 1/8 tsp Salt
- 1 tbs Coconut oil
Sugar Free Peanut Butter Directions:
- In a food or blender, add the peanuts, Lite&Sweet and salt. Pulse it until crumbly and flour like.
- Grind the mixture in slow speed until smooth and buttery, finally add the coconut oil and mix on high until fully incorporated.
- Pour the mixture into a sealable jar and freeze for 30 minutes. Then refrigerate for a couple hours. After the chilling complex, the peanut butter will be firm and scoopable, just like store bought.
