Low Carb Sweet Potato Stew
Cold weather is upon us and there is nothing better than cozying up in your favorite sweater with a nice hot bowl of soup. This Low Carb Sweet Potato Stew is perfect for making a batch to heat up throughout the week whenever you need it. The hardy beef will make your husband gobble this right up without even knowing it’s low calorie and low carb! shhh… no one will tell.
I have so many memories of my mom cooking soup over the stove. She loves to add dumplings (which is contrary to the “low carb” aspect of course), something she learned from her mother. Usually her soup doesn’t last very long because people always go for second and third helpings, but it is always just as good eaten as leftovers. This recipe reminds me a lot of hers.
This Low Carb Sweet Potato Stew is filling and light, perfect for both lunch and dinner, and maybe even an evening snack (my husband would eat anytime of the day). What more can I say, it is SO quick and easy too! You can also have as many or as few ingredients as you want, and you never have to worry about any side dishes. Soup is the main course and the sides in one blended, melt in your mouth, explosion of flavors. Although, if you’re like me, you might want to make a batch of cheesy biscuits, or garlic bread to go along with it. Another reason why soup is one of my favorite fall/winter meals is because it is so versatile. This particular recipe can be used as a base for almost any broth soup you like. To add a little zing, you might decide to switch out the beef with some Italian sausage. The sausage has spice that will add a little kick and excellent flavor. Feeling like it needs more color? No problem. Throw in a few handfuls of spinach leaves, or some broccoli. You prefer a creamier soup? Add in some non-fat evaporated milk and this savory broth becomes rich and creamy. Honestly, you can basically add any veggies you want, and the flavors will blend beautifully! You can’t go wrong with this healthy meal choice. Enjoy!
Low Carb Sweet Potato Stew
serving 4 bowls
1 1/4 cups serving: 265 calories per serving
1 can (14-1/2 ounces) beef broth
3/4 pound lean ground beff or ground turkey
2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
1 small onion, finely chopped
1/2. cup tomato juice or v8 juice
2 tsp golden raisins (omit for low glycemic option)
1/2 tsp dried thyme
pinch cayenne pepper
In a large saucepan, bring broth to a boil. crumble beef into broth. Cover and cook for 3 minutes, stirring occasionally. Add the remaining ingredients; return to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until meat is no longer pink and potatoes are tender.
