Low Carb Spinach and Ham Frittata

This recipe is the ultimate one-pan meal made with simple on hand ingredients. Frittatas are good for dinner or breakfast and leftovers make great to-go slices. I am all about making a fast, simple, recipe for breakfasts and this Frittata I love so much because it requires no work.

Frittatas are my go-to dish when I am very busy in the morning and want a healthy breakfast. This recipe works very well for brunch and entertaining guests for breakfast. Because, let’s be honest some morning we are just out of time to make a healthy morning breakfast but somehow the end result is fancy and yes healthy scrambled eggs with greens and ham. Yummy!

This is great, simple yet savory and delicious. You can be creative and add extra veggies if you want more because its such a great version that you can pile on the veggies. You can also make it in a smaller skilled just reduce the amount of eggs, use 8 eggs for a 8 inch skillet and works great too. You will love how its a one pan meal, no extra dishes. The preparation is super fast also just take a few minutes to place everything in the skillet, pop it in the oven and I run to finishing getting ready. Just perfect for busy mornings!

Low Carb Spinach and Ham Frittata


10 large eggs

1 1/2 cups shredded Monterey Jack cheese

1/2 cup finely grated Parmesan cheese

4 to 6 thin slices smoked ham, torn in pieces

2 Tbsp. butter

2 Tbsp. olive oil

1 large spring onion or 4 green onions, sliced into thin rounds

10 oz. baby spinach


Preheat oven to 350 degrees. In a large bowl whisk together eggs, cheeses, ham, and 1/4 tsp black pepper. In an oven-going 10 inch skillet heat 1 Tbsp. butter and 1 Tbsp. oil over medium het until butter is melted. Add onions; cook and stir for 2 minutes or until tender. Gradually add greens ; cook and toss for 2 minutes or until wilted. Transfer to a colander to drain, pressing out excess liquid. Stir green into eggs.

In the same skillet heat remaining butter and olive oil medium heat until butter is melted. Pour in egg mixture, Bake for 20 minutes or until slightly puffed and set. Remove; let cool 10 minutes before serving.
