Low Carb Pork & Cabbage Dinner

This easy, delicious recipe of pork chops and cabbage, makes an excellent dish for a healthy dinner.  It is light with only 450 calories per serving. Low Carb Pork & Cabbage Dinner

Makes 4 servings

Prep time: 25 minutes

Ingredients:

1 Red Onion medium, thinly sliced

1 Tbsp Extra Virgin Olive Oil

1/4 cup Apple Cider Vinegar

1 tsp Lite and Sweet

8 (2-oz) Pork Cutlets

Salt & Pepper lightly season the pork cutlets

4 cups shredded Red Cabbage

1/2 cup roasted and salted Pepitas

Directions:

Place the thinly sliced onion in a small bowl with 1 Tbsp. vinegar and 1/2 tsp salt and 1 tsp of Lite and Sweet; stir well and set aside.  In a 12-inch skillet heat 1 Tbsp. olive oil over medium-high. Season pork with salt and black pepper. Add half the pork to skillet. Cook for 2-3 minutes each side or until golden brown. Add cabbage and 2 Tbsp. olive oil to skillet. Heat over medium for 10. minutes or until the cabbage has wilted. Add onion mixture to cabbage along with remaining vinegar and the pipits; toss to coat and serve!
