Healthy Potato Salad with Radishes and Greek Yogurt Dressing

I am preparing a great meal for the coming up BBQ and the majority of my guests wanted Grilled Hawaiian Chicken which is a recipe I have on the blog, and voted for a potato salad. I am all about making a good traditional BBQ foods. We are in the end of summer but I wanted to have one last get together with a summer BBQ and of course you need a potato salad, this potato salad is delicious with russet potatoes, radishes making it more fresh, olives and seasoning . Its a very fresh and tasty potato salad perfect for fun gatherings, picnics, and parties to go. As you are thinking of what to make for your holiday or take to the party, how about a healthier version of classic creamy potato salad? I just made this side dish for my family and I couldn’t wait to share with you! We all love potato salad, but do you ever get that touch of guilt? I’ve added an ingredient that not only adds the luscious texture you crave, but additional protein with each spoonful. This is probably one of the easiest potato salads you’ll make. Ready to boil?

This Potato salad is very simple to make and will take a short time of only 20 minutes. I used plain nonfat Greek Yogurt. Using a yogurt as your dressing is a much better and healthier replacement to a heavier mayonnaise. I’ve tried making this recipe without mayonnaise it does’t have the same good loucious flavor, unless you add greek yogurt because it brings the creamy, tangy and loucious flavor that you need to complete this amazing dish. You will want to thinly slice the potatoes, and for this recipe russet or Yukon potatoes work great. Also when boiling the spuds, start them in the pot with cold water to prevent them from over cooking and being mushy on the outside and crunchy on the inside. If you start them in cold water, you will have a perfectly boiled potato. Follow the directions for quick 8 minute boiling time for a perfect cooked potato. While the potato cooks you can slice the radishes, and cut the green olives, chop the parsley and prepare the spices.

Healthy Potato Salad with Radishes and Greek Yogurt Dressing

Ingredients:

1 lb. Yukon gold or Russet potatoes, peeled 1/4 inch thick

1/2 C. Greek yogurt

1/4 C. Drained and cut Manzanilla olives

1 Tbs Whole gained seeded mustard

2 Tbs Chopped parsley

2 Tsp. Lemon zest

1 Tbs. Lemon juice

1/2 Tsp Onion powder

1/2 Tsp Salt

1/2 Tsp Pepper

4 Radishes thinly sliced

Directions:

In a pot, cover potatoes with 2 inches of cold, salted water. Bring to a boil. Cover and cook over medium heat until tender, for about 8 minutes. Removed from heat and drain potatoes; set aside to cool. In a bowl, mix together the greek yogurt, cut manzanilla olives, mustard, lemon zest, lemon juice, onion powder, salt and pepper. Add potatoes to the mixture and gently stir to combine. Spread half of  the potatoes to a platter top with radishes. Add the rest of potatoes and top with more radishes and extra seasoning as needed.
