Tarts, salads and seafood are all recipes that come to mind when I think of summer. Each recipe includes fresh ingredients that lighten up a dish and cool down any warm summer day. And what if I told you that these recipes were all bikini friendly? The good news is that when you use Lite and Sweet all of your meals will be bikini friendly! Including this tart, salad and seared shrimp.

I use Kiwis, strawberries, mangoes, peaches and fruits that are summer fresh for these fruit tarts—and a dessert becomes healthy with Lite and Sweet, the sweetener combination of xylitol and erythritol I discovered that is lower in calories than table sugar, prevents dental caries and mineralizes teeth. I chose scallops because of how is high in Omega 3 shrimp being a healthy supply of quality protein, magnesium and potassium. Add ginger root, bok choy, red pepper, leeks, cucumbers, paprika and garlic for further taste refinement and regenerative phytonutrients and you will see a thinner, healthier you the next time you look in the mirror.

For this months issue of Healthy Living I decided to put 3 of my favorite recipes. They are all very different in taste, but are each exactly what you’d want to take a big bite of in this warm weather. For my first recipe I chose a summer melon salad filled with the perfect ingredients. For starters, watermelon and spinach somehow make the perfect combination. While they are different and unique in flavors and taste great together. When they come together these ingredients makes a bright melon salad that is filled with an abundance of taste. This salad can be the perfect side dish, and even a light lunch to impress your guests. Whichever way you decide to use it, you won’t be disappointed with the outcome!

Fresh and sweet always work perfect together! And it’s why I love this fruit tart. It is so diverse in the fact that you can mix up the flavors depending on what fruits you want to add to it. I’ve been on a berry kick since they are all so fresh around this time of year, but it is just as easy to add peaches, kiwis, or any other fruit of your choice. But whichever fruit you decide to top the tart with you’ll always have that sweet flavor thanks to the vanilla bean custard under the fruit. It’s a fresh dessert you’ve all been looking for!

Scallops with creamy grits seared shrimp makes my mouth start watering just writing about it. You will feel like you’re in a 5-star restaurant with this dish because of the small details that bring the whole thing together. There’s freshly grated Parmesan cheese, bacon, onions, parsley and chives to tie the whole dish together. It’s grouping unique ingredients to make one savory dish. And on top of all ofther side ingredients, your star of the dish, being the scallops and shrimp, won’t go unnoticed.
