If you’ve recently visited my blog or been on my social media, you’ve probably remembered seeing peach scones, a peach crumble and peach herb salad. Maybe I’m obsessed with peaches or maybe I just know that all of you love a good peach recipe. And of course I love eating and cooking when fruits are in season because they are fresh, sweet and in good price. So, I decided it wasn’t too soon, because it’s never too soon, to make another peach recipe which is a no sugar added grilled peaches and berries! It’s as sweet and tasty as the other recipes, but has different flavor all thanks to blueberries.
If you have never heard of tinfoil dinners I don’t know if we can be friends. I’m totally kidding, except that it’s going to be something that’ll take time to get over in our friendship ha-ha. Anything that involves tinfoil makes its way into my heart because of easy cleanup! And with this recipe you literally have to use a cutting board, a knife and some tinfoil to prep. Easy, easy, easy. It’s why it is one of my kid’s favorite recipes. They are totally involved and get to help with the entire process! They do the wrapping of the peaches, I do the watching. And after they are grilled to perfection, the kids do the throwing away of the tinfoil, and again, I just watch. It makes them feel like they are the ones cooking for me!
Grilling anything during the summer is a must. Since you are already spending time outside and cooking outside, why not make your dinner and an easy dessert. It brings a certain smell to the air that everyone loves. We are still using those summer cooking techniques but are going outside of the box and making something a little bit more unique. It’s a new flavor combination that my whole family not only enjoys eating, but absolutely loves putting together! Try it with your little ones and they will be proud of all of the new things they’ll get to try!
It’s very healthy no sugar added yummy sweet grilled peaches garnished with blueberries and you can eat it by it self which is super good and no gluten or you can also add some fresh sugar free whipping cream on top or with some sugar free vanilla ice cream yummy treat for summer.
No Sugar Added Grilled Peaches and Berries
2 medium rip peaches, halved and pitted
½ cup fresh blueberries
1 tbsp Lite and Sweet
2 tsp lemon juice
2 tsp butter
Place two peach halves, cut side up, on each of two double thicknesses of heavy-duty foil. Sprinkle each with blueberries, Lite&Sweeet and lemon juice; dot with butter. Fold foil over peaches and seal tightly.
Grill covered, over medium-low heat 18-20 minutes or until tender. You can also add the peaches straight into the grill to give the grill marks for 1-2 minutes, then follow directions above.
