Gluten Free Pistachio Pomegranate Oatmeal

If not, then you’ll love this dish because you will be feeling that way after putting it together! Pistachio, pomegranate oatmeal, need I say more? Now it makes sense why you’d feel like a professional making this because you are using high end ingredients like pistachios and pomegranate that high end restaurants use. It’ll look fancy and classy, taste delicious, and yes, you will feel like the best chef in the world after putting it all together!

It is a healthy breakfast that will keep you full and satisfied. This gives you the nutrition you need and at the same time being sugar free. Healthy for anyone that is trying to maintain a healthy body. This sweetener is natural, because comes from fruits and vegetables. It also is only 3 on the glycemic index making it safe and a good alternative for diabetics. It’s an rounded nutritious breakfast that your whole family can enjoy.

And talking about family, I am a big fan of oatmeal, but my girls, not so much. I used to think it was the flavor and would be shocked how that could possibly be because I love the flavor! I then thought that maybe it was the consistency, so I started adding different fruits or nuts that have different textures to help with the consistency and it worked! One handful of raspberries turned into a mixture of things and lead me to this recipe.

Also incorporating nuts it’s excellent for your diet because it provides you with Omegas 3 that is so important for our brain health, making this a win win breakfast. My girls started liking oatmeal and I finally got every mothers dream, making one thing for breakfast instead of 6 different things that my kids would slightly pick at. We could all sit around the table and eat the same thing that is high in fiber, has antioxidants, and vitamins and minerals. SO not only am I putting in half the work to make something for breakfast because it’s simple and quick to make, it is something that is filled with double the nutrients! So not only is this meal a proud chef moment, it’s also a proud mom moment as well!


Yield: 1 serving


¾ cups Old-Fashioned Oats

1 ½ cups Water

2 tablespoons low-fat Greek Yogurt

2 tablespoons Pomegranate Seeds

1 tablespoon Pistachios, roasted and chopped

1 tablespoon Pumpkin Seeds

2 teaspoons powdered Lite & Sweet

Ground Cardamom



  1. Boil the 1 ½ cups of water in a small pot, add salt and then add the ¾ cups of oats. Cook the oats for about 5 minutes over medium heat stirring occasionally. When cooked to your liking add the powdered lite & sweet.
  2. Pour into your chosen bowl and add the greek yogurt. Stir until combined.
  3. Sprinkle the pomegranate seeds and pistachios over the oatmeal. Garnish with some cardamom. Serve and enjoy!
