Gluten Free Cauliflower Salami Caprese Pizza

Caprese is a fantastic recipe. It never feels heavy; it always feels light, and fairly healthy. You can make a caprese salad, or sandwich, but have you had it as a pizza before? Chances are you haven’t.

So I decided to make one for you.

The beauty of this recipe is that I’m going to keep it healthy. You think pizza, and you think caprese, and that automatically leads you to bread and cheese. So I’ve decided to keep this recipe feeling light and healthy and make the pizza crust with cauliflower.

And not only are we going to switch up a classic caprese and turn it into a cauliflower crust pizza, but we are going to add an additional element of sliced salami.

The salami adds a nice protein to this dish, but it also helps add another texture as well as a fantastic flavor to pair with the mozzarella cheese.

This recipe makes a perfect pizza to share, or if you’re feeling indulgent, you can eat the whole thing, since it’s made with fresh, healthy ingredients. Plus this is something your kids will love!

Gluten Free Cauliflower Salami Caprese Pizza

Ingredients:

1 head of cauliflower, stalk removed

1/4 cup almond or coconut flour

1/2 cup shredded mozzarella

1/2 tsp dried oregano

1/2 tsp kosher salt

1/4 tsp garlic powder

2 eggs , lightly beaten

Topping:

1/2 cup pizza or pasta sauce

1/2 cup fresh part skim  mozzarella cheese, shredded and divided

8 oz. Salami

1 tbsp Pesto

Fresh Basil (garnish)

Red onions (garnish)

Directions:

Preheat the oven 400 degrees. Line a baking sheet with parchment paper. Break the cauliflower into florets and pulse in a food processor until fine. Steam in a streamer basket and drain well. (I like to put it on a towel, twisted it to get all the moisture out). Let it cool.

In a bowl combine cauliflower, almond or coconut flour,  mozzarella or parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into circle resembling a pizza crust. Bake for 20- 25 minutes. Or until the crust is darken around the edges and the center ready.

Add the toppings starting with the sauce, and return to baking for another 10-15 minutes. Enjoy!
