Banana Bread with Lite&Sweet

A sugar free tender cakey loaf with excellent banana flavor and sweet taste. It is the perfect cake to make no matter what the season is. 

Have you guys ever seen a banana tree in real life? They’re kind of freaky looking. Who would have thought something so delicious could be on such a tree. I loved spending my childhood in Brazil and seeing banana trees everywhere. It was a snack I enjoyed eating all the time and so good tasting and healthy. 

My kids love bananas and when I see them turning a little brown it’s time for this sugar free banana bread. It’s a great recipe that is easy to make and enjoyable to eat for a snack or anytime of the day it’s sure to satisfy. 

The positive part of this recipe is because I baked it with is Lite&Sweet! I never make anything without it because it makes everything SUGAR FREE! Which is what I am all about. Having it SUGAR FREE makes me feel way better when I am feeding it to my two daughters. 

1 cup Lite&Sweet

1/2 cup softened butter

2 eggs

3 to 4 medium bananas (about 1 1/2 cup)

1/2 cup buttermilk

1 teaspoon vanilla

2 cups of all purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup chopped nuts (if desired)

 

Directions:

 

Heat oven to 350F. Grease bottoms of a 9x5 loaf pan.

In a large bowl, cream together with an electric mixer the Lite&Sweet and butter. Add eggs, mashed bananas, buttermilk and vanilla; mix well on medium speed until smooth. Stir in flour, baking soda, baking powder, salt and nuts until moistened. Pour batter into pan.

Bake for 55 to 60 minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes. Loosen sides of loaf from pan; removed from pan to cooling rack. Cool about 1 hour before slicing.
